Pumpkins Even the seeds are good to eat from this popular fall favorite. For 2 cups of seeds, bring 1 quart of water to boil, add 2 T. salt. Add seeds and boil for 10 minutes. Drain; spread on paper towel; pat dry. In a bowl, toss seeds with 1 T. olive oil. Spread on large cookie sheet. Place in preheated oven (250 degrees). Stir every 10 minutes for 30 to 40 minutes, until seeds are crisp and golden brown. Cool, shell, and eat. or seal in airtight container and refrigerate until ready to eat.
